Recipe: Peach-Mojito Cider Ice Pops

Honoring the childhood memory of the ice cream truck’s twinkling song, let’s give frozen warm-weather treats an adult spin with hard cider to cool you down when the temperature rises. Jester & Judge brings a little Southern hospitality to the Pacific Northwest with the Columbia Belle peach-infused cider. The Columbia River Gorge cidery not only features a playful name but also sports inspired flavor combinations using all local ingredients from the Pacific Northwest. This cider has a lush peach flavor with a pop of fresh mint, drinking semi-dry with a grassy peach profile. Enjoy chilled or try in a mojito in the place of soda for a tasty cocktail twist.

Peach Mojito Spiked Ice Pops
Makes about 4 cups of mixture, enough for about 10 ice pops

2 cups chopped ripe peaches or nectarines, or frozen peaches, defrosted
¼ cup white rum
1/3 cup sugar
¼ cup fresh lime juice
1 tablespoon minced fresh mint
1 bottle (12 ounces) Jester & Judge Columbia Belle

Combine the peaches, rum, sugar, lime juice and mint in a blender and process until smooth. Then add in the cider and blend for 10 seconds.

Pour mixture into ice pop molds, leaving a little room at the top for freezing expansion. Add the pop sticks and freeze at least 12 hours or until totally frozen.
