Tieton Cider Works Sparkling Perry

Harmony Orchards has one of the best seats in the house. Perched at 2,000 feet above the convergence of the Tieton and Naches rivers in Washington’s  Yakima Valley, the heralded fruit-growing region of the West, Harmony’s fertile soils and resulting fruit enjoys long days and cool nights, a diurnal shift that makes the apples, pears, cherries and apricots off the orchard unique to the region. Studied horticulturist and third generation farmer Craig Campbell and his wife Sharon launched Tieton Cider Works off the organically grown, beautifully situated fruit of Harmony Orchards in 2008, planting cider apple varieties that same year. Nearly eight years later, Tieton has a second brand, Rambling Route, a new and trending cider bar in downtown Yakima, Washington, and the largest acreage of cider apples and perry pears in the state of Washington.

Those 55 acres, along with four locations and more than 400 acres, go into the 12 ciders Tieton produces, like the Sparkling Perry. Fresh-pressed perry pears from the estate fuel this Champagne-esque dry perry, a dazzling, mineral-rich and pleasantly lower alcohol corked bottling. A proud at-home cook who collaborates with chefs around the country, Sharon Campbell also shares her recommended pairing, winter squash stuffed with quinoa, mushrooms and cranberries.
