DeFisher Fruit Farms proudly supplies the fruit for Rootstock’s all-natural ciders, from the thriving Wayne County in Williamson, New York. The farmstead cidery was the first to pop up post Prohibition and enters its fourth year of production in 2016.
Committed to sustainability and loyal to the region, Rootstock reuses the organic byproducts from its cidermaking process onsite, fuels a solar energy system that produces green energy and sources 95 percent of its equipment from either Upstate New York or U.S.-based companies. An outspoken voice for cider in the state, Rootstock is also one of the founding cideries in the Finger Lakes Cider Alliance and the annual Finger Lakes Cider Week in October.
A choice blend of handpicked heritage and dessert Finger Lakes apples, the Legend sits in the middle of sweet and dry with pure, golden apple aromas dusted with earth. The palate pulls out similar and simple flavors with a sprinkling of baking spices and honey, finishing with fresh-squeezed acid and easy tannin. The Legend is one of local dedication and elusiveness—once the batch is gone, Rootstock claims it will not be making it again.
