Because apple is incredible amiable, it lends itself to a lot of flavors — some borrowed from the beer world, some from the wine. In For Shore from Vermont’s Citizen Cider, apple borrows from the former as a gose-style cider, finished with coriander seeds and sea salt. (Fun fact: German gose beer was traditionally salty because of the water used to brew it, not necessarily from the addition of sodium.)
For Shore takes you to the beach, even when the beach season has likely passed. Big whiff of roasty, earthy coriander blows in like sea breeze immediately, causing you to search for the apple a bit but you find it on the lightweight palate, where a just-brined apple quality is fused into the lemony peel finish. Surprisingly crushable flavor, even if the spice is a little off-putting, that apple wins in the end.
