The Colfax, California, cidery uses local apple wine as the base of this tipple, then ages it in dark rum casks and tops the blend off with wildflower honey and dark candied syrup.
Finding inspiration in the literary classic “Treasure Island” by Robert Louis Stevenson, anyone who has been on Disneyland’s Pirates of the Caribbean ride should be familiar with the line “15 men on the dead man’s chest, yo-ho-ho and a bottle of rum.” Channeling its rum surroundings and roused by the flavors of the Caribbean, the 15 Men cider from Crispin is hazy but vivid in its tropical hue that pushes out aromas of rum, caramel, vanilla, ginger spices and baked apple. The flavor profile strongly stands in the off-dry category, with the sweet and fruity tastes one might expect from mixing rum with fermented apple juice. Nuanced with the benefits of oak, this cider is another intriguing offer from this California cider powerhouse.
