Gabbie’s Premium Cider Semi Dry

Rumor has it farm-based cider has been made in British Columbia’s Gulf Islands for the better part of a century. Apple varieties like Yarlington Mill, Newton Pippin, Kingston Black and Porter’s Perfection are thought of have been the focus then, and are the centerpieces of the ciders made on Gabriola Island’s Ravenskill Orchards now, home to Gabbie’s Premium Cider. Keeping this time-honored tradition alive, Gabbie’s produces its Semi Dry from very old trees on the estate property. Tart and crisp, citrus and green apple dance with moderate acidity and savory salinity. The cider brings a rusticity to the table that would be wisely complemented by this mussels recipe.
