Slyboro Ciderhouse Night Pasture

Found next to its Hicks Orchard just east of the New York-Vermont state line, Slyboro Ciderhouse strives to reintroduce drinkers to the “lost craft” of traditional American cider. All of the ciders are produced from this estate orchard’s fruit, a farm that is New York’s oldest U-pick orchard with apple tree roots going back to 1895. The farm’s history has much to do with the cidery’s push for traditional, varietal-focused ciders, as well as what is planted in the ground: might as well show it off. Like in the Night Pasture, a still cider made from Golden Delicious, Northern Spy and English bittersweets. The complex, dry cider hints at flavors of sweet spices and mineral with its apple core, making it a promising counterpart for roasted squash season.
