Lower Proof cider cocktail: The Cider Drop

The dry, farmhouse-like funkiness of Pierre Huet Cidre Bouché Brut gets a touch of sweet lemon to create a drink that puts a creative, low-alcohol twist on the classic Lemon Drop. While the cocktail is on the sweeter side, the dry cider keeps it from going overboard, with a refreshing hit of sparkling apple flavor. This drink provides a low-proof option that can serve as a light dessert. 

Makes 1 cocktail

½ ounce limoncello 

¼ ounce simple syrup

2 dashes aromatic bitters

3 ½ ounces Pierre Huet Cidre Bouché Brut, chilled

Garish: lemon peel twist 

Add the limoncello, simple syrup and bitters to a small shaker or glass. Add ice and stir until chilled. Strain into a coupe glass. Top with the cider and garnish with the lemon peel.
