Dubbed Red Barn for the cidery’s Lake Ontario waterfront tasting room, orchard and production facility in Barker, New York, — that is, yes, in a red barn — BlackBird Cider Work‘s growing line of farm-based canned ciders now includes this still, wild-fermented cider. Sweet apple aromas stream from the glass, laced in fine natural bubbles from the pour, with a spill of crushed herbs and candied apricot. The palate fills with lush, honeyed apple that, though certainly on the sweeter end of the spectrum, steers clear of a cloying finish by use of cleansing acidity and a creamy, smooth aftertaste.
