Want a fresh cider alternative to store-bought ginger beer? New Zealand’s Zeffer Cide
Co. Cidre Demi-Sec may be just the ticket. This traditional French cider is wild
fermented, bright and effervescent. The perfect backdrop to fresh ginger, sweet
pineapple-infused rum, and the warm spiced infusion of Angostura’s own Caribbean
Amaro.
Makes 1 Cocktail
Make sure your pineapple is nice and ripe to provide maximum flavor when infusing
your rum, and don’t forget to save the fruit for boozy ice cream toppings, later on, no
waste!
2-3 slices fresh ginger
1/4 ounce simple syrup
2 ounces Pineapple Infused Jamaican Rum (recipe follows)*
3/4 ounces Amaro di Angostura
3/4 ounce fresh lime juice
2-3 ounces Zeffer Cider Co. Cidre Demi-Sec
Garnish: lime wedge and candied ginger
Add the ginger slices and simple syrup to a mixing glass and muddle well to release the
flavors of the ginger. Add in the infused rum, amaro, and lime juice. Fill with ice, cap,
and shake vigorously to combine. Strain into an ice-filled Collins glass and top with
cider. Garnish with a lime wedge and candied ginger.
*Pineapple Infused Jamaican Rum
Makes a little less than a 750ml bottle of infused rum
1 Bottle (750ml) Jamaican Rum
1/2 fresh pineapple cut into cubes
Combine all ingredients in a clean jar and steep for 48 hours. Strain liquid into a clean
bottle and reserve pineapple for another use.
