A full-on tribute to apple cider—the drink that makes fall feel official—this collection of five inventive flavors reimagines the classic comfort of cider in scoopable form. From cider-spiked custards and cinnamon-swirled rolls to festival-inspired donuts and bright, refreshing sorbets, each flavor celebrates the ritual of apple season in its own unique way.
“Nothing signals fall quite like apple cider,” said Tyler Malek, Co-Founder and Head Ice Cream Innovator at Salt & Straw. “We wanted to capture that feeling of coziness and celebration, whether it’s still sunny and 70 or the leaves are finally starting to change. Each of these flavors is its own love letter to cider, baked, churned, and swirled into unforgettable scoops.”
The Apple Series
- Apple Cider Donuts: Salt & Straw reimagines the farmstand classic with help from longtime friends at Sidecar Doughnuts. Their soulful apple cider cake doughnut—sugar-and-spice streusel-topped and glazed with royal icing—finds new life in ice cream form. Thick ribbons of cinnamon-spiced vanilla caramel wind through royal icing-inspired ice cream, dotted with hunks of fresh donut for a pint that’s as irresistible as a dozen warm from the bag.
- Apple and Cheddar Cinnamon Rolls: Back by popular demand, this scoop begins with pillowy cinnamon rolls stuffed with spiced apple pie filling and gooey cinnamon. The rolls are diced and folded into a tangy Beecher’s Flagship Cheese ice cream, whose subtle sharpness recalls cream cheese frosting melting into freshly baked bread. Finished with swirls of cinnamon, it’s a scoop that tastes best with a sip of cider between bites.
- Vanilla Apple Custard Tart: Inspired by the French classic Tarte Normande, this decadent creation layers silky custard with tart Granny Smith apples, nestled into a housemade cinnamon shortbread crust and baked until golden and gloriously jiggly. The tart is then folded into a dense vanilla custard ice cream spiked with apple cider. Custard inside custard—wrapped in warm spices and unapologetically indulgent.
- Caramel Apple Sherbet: A fall festival staple, distilled into a scoop. Salt & Straw’s lightly burnt, vanilla-infused caramel creates deep ribbons of flavor that weave through a bright, clean apple sherbet made from pure apple purée. The contrast of dark caramel and crisp sherbet delivers all the joy of a caramel-dipped apple, no stick required.
- Hoppy Apple Cider Sorbet (v): An homage to the Pacific Northwest’s annual apple and hop harvests, this dairy-free sorbet is crafted from Finnriver’s dry-hopped cider. Grown on the cidery’s own eighty acres, Washington dessert apples are juiced, fermented, and steeped with Cascade hops, then churned with additional Centennial and Amarillo hops. The result: a crisp, refreshing scoop layered with grassy, floral, and citrusy notes that capture the essence of the region’s fall harvest.
