Conceptualized in the mountains of Colorado then created in Long Island, Southold Cider is a pandemic success story. The cidery launched in late 2019 as an at-home production, going commercial with the help of a local distillery in the height of last year’s madness, coming out the other side with four inventive bottlings, like this Saison Cider. New York apples — exclusively from the North Fork of Long Island — are juiced and fermented with saison and wild yeasts to produce a dry, crisp and broad cider. Layers of apple, spice, brioche and vibrant acid make this a winner as a standalone sipper or paired with a charcuterie board and a roaring fire.
