The Pommeau from Mt. Defiance in Middleburg, Virginia, is the perfect combination of cider and apple brandy, aged together for one year in used bourbon barrels. Unlike many makers of fortified cider, the small-batch producer is able to keep the production of this beverage in-house because of its dual licensing as a cidery and distillery. Sweet and apple-forward with a boost of brandy warmth, the caramel candy flavors of the barrel-aged apple wine go well with the herbaceous and robust Amaro Meletti. The perfect after-dinner sipper.
Makes 1 cocktail
Ingredients
1 ½ ounces rye whiskey
1 ounce Mt. Defiance Pommeau Barrel Aged Apple Wine
¾ ounce Amaro Meletti
2 dashes Fee Brothers Old Fashion Aromatic Bitters
Garnish: orange peel
Directions
Measure all ingredients into a mixing glass. Fill 3/4 full with ice and stir gently to combine for 15 to 20 seconds. Strain into a coupe glass and garnish with an orange peel, releasing the oils over the drink before serving.
TIP: Don’t skip out on the orange peel oils! It may seem like an added step, but these delicate oils add a lot of aroma to your cocktails and enhance the amaro flavors.
