“Being from the Southwest, agave is king,” says Kim Haasarud, owner of beverage consultancy Liquid Architecture in Phoenix, Arizona. As a nationally recognized mixologist and drinks authority, Haasarud works with liquor brands, restaurants and hotels across the country. “I love putting tequila in unexpected places and pairing it with flavors and spirits one may not have typically thought of,” she says. “The dried fruit nuances of sherry, paired with the crisp apple and honey notes of the cider, go really well with the herbaceous tequila flavors and aromas. And the drink is versatile enough that you could add additional spices for a more fall-winter flavor or add mint to it to be a little more spring-summer.”
Mexican Moon Cobbler
Makes 1 cocktail
½ ounce reposado tequila
2 ounces oloroso sherry
2 ounces Mountain West Cider Ruby
½ ounce simple syrup*
Garnish: mixed berries
Combine all of the ingredients in a cocktail shaker and lightly shake for a few seconds. Pour into a glass over crushed ice and garnish with berries.
*To make simple syrup, combine 1 cup boiling water with 1 cup sugar. Stir until sugar is completely dissolved. Cool and store refrigerated for up to 2 weeks.
